Mini Lentil and Sweet Potato Patties

Ingredients
- 100g red lentils, rinsed
- 1 medium sweet potato (approx. 250g), peeled and diced
- 50g rolled oats, finely ground
- 1/2 small onion, very finely minced
- 1/4 teaspoon ground cumin
- 1/4 teaspoon ground coriander
- 2 tablespoons olive oil
Instructions
- 1.In a small pot, combine the rinsed lentils and diced sweet potato. Add enough water to cover by about 2 cm. Bring to a boil, then reduce heat and simmer for 15-20 minutes until everything is very soft.
- 2.Drain any excess water thoroughly. Mash the lentils and sweet potato together with a fork until you have a thick, textured paste.
- 3.Allow the mixture to cool for a few minutes, then stir in the finely minced onion, ground oats, cumin, and coriander until well combined.
- 4.With damp hands, shape the mixture into small, flat patties, about 3-4 cm in diameter. This batch should make about 12-16 patties.
- 5.Heat the olive oil in a non-stick frying pan over medium heat. Gently cook the patties for 3-4 minutes on each side, until lightly golden and firm enough to hold their shape.
- 6.Transfer the patties to a paper towel-lined plate to cool completely before serving. They can be stored in an airtight container in the refrigerator for up to 3 days.
