Ingredients
- 150g minced lamb
- 300g butternut squash, peeled and cubed
- 50g fresh spinach
- 15ml olive oil
- 150ml water or unsalted broth, for blending
- 1 pinch onion powder (optional)
Instructions
- 1.Heat the olive oil in a small saucepan over medium heat. Add the minced lamb and cook for 5-7 minutes, breaking it up with a spoon until browned.
- 2.Add the cubed butternut squash to the saucepan. Pour in just enough water to cover the ingredients, bring to a boil, then reduce heat, cover, and simmer for 15 minutes until the squash is very tender.
- 3.Remove the saucepan from the heat. Add the fresh spinach and stir until it wilts from the residual heat, about 1-2 minutes.
- 4.Carefully transfer the entire mixture to a high-speed blender. Add the optional pinch of onion powder.
- 5.Blend until completely smooth. Add more water or unsalted broth, one tablespoon at a time, to reach your desired consistency.
- 6.Allow the purée to cool before serving. Store leftovers in airtight containers in the refrigerator for up to 2 days or freeze in single-portion trays.
