Ingredients
- 300g ground lamb
- 400g sweet potatoes
- 100g kale, chopped
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 15g fresh ginger, grated
- 1 tsp fresh turmeric, grated (or 1/2 tsp ground)
- 30ml olive oil
- Sea salt to taste
- Handful of fresh cilantro or parsley for garnish
Instructions
- 1.Peel and dice the sweet potatoes into small 1-cm cubes. Finely chop the onion and garlic, and grate the ginger and turmeric. Wash and chop the kale, removing any tough stems.
- 2.Heat 15ml of olive oil in a large skillet over medium-high heat. Add the diced sweet potatoes and cook for 10-12 minutes, stirring occasionally, until tender and slightly browned. Remove from the pan and set aside.
- 3.Add the remaining 15ml of olive oil to the same skillet. Add the chopped onion and cook for 3-4 minutes until softened.
- 4.Add the ground lamb to the skillet, breaking it up with a spoon. Cook for 5-7 minutes until browned. Add the minced garlic, grated ginger, and grated turmeric, cooking for another minute until fragrant.
- 5.Return the cooked sweet potatoes to the skillet. Add the chopped kale and a pinch of sea salt. Stir everything together and cook for 2-3 minutes until the kale is wilted.
- 6.Serve the hash warm, garnished with fresh cilantro or parsley.
