Ingredients
- 300g ground lamb
- 20g fresh mint, finely chopped
- 20g fresh parsley, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1/2 teaspoon turmeric powder
- 30ml extra virgin olive oil, divided
- 1 large cucumber, diced
- 1 ripe avocado, diced
- 50g red onion, thinly sliced
- 100g mixed lettuce greens
- 30ml fresh lemon juice
- Sea salt to taste
Instructions
- 1.In a medium bowl, combine the ground lamb, chopped mint, parsley, minced garlic, grated ginger, turmeric, and a pinch of sea salt. Gently mix with your hands until just combined, then form into 4-6 small patties.
- 2.Heat 15ml of olive oil in a large skillet over medium-high heat. Carefully place the patties in the skillet and cook for 3-4 minutes per side, until browned and cooked through.
- 3.While the patties are cooking, prepare the salad. In a separate bowl, combine the diced cucumber, diced avocado, and thinly sliced red onion.
- 4.In a small jar, whisk together the remaining 15ml of olive oil, the fresh lemon juice, and another pinch of salt to create the dressing. Pour over the salad and toss gently to coat.
- 5.To serve, divide the mixed lettuce greens between two plates. Top with the warm lamb patties and a generous scoop of the avocado-cucumber salad.
