Ingredients
- 100g lean lamb mince
- 200g sweet potato, peeled and cubed
- 50g frozen peas
- 1/4 small onion, finely minced
- 5ml olive oil
- 150ml water
Instructions
- 1.In a small saucepan, heat the olive oil over medium heat. Add the finely minced onion and cook for 2-3 minutes until softened.
- 2.Add the lamb mince to the pan, breaking it up with a spoon, and cook until browned all over.
- 3.Stir in the sweet potato cubes and pour in the water. Bring to a simmer, then cover and cook for 15 minutes, or until the sweet potato is fork-tender.
- 4.Add the frozen peas and cook for an additional 3 minutes until they are bright green and tender.
- 5.Remove from heat. Mash the mixture with a fork to a texture suitable for your toddler. For a smoother puree for younger babies, use a blender.
- 6.Allow to cool to a safe temperature before serving. Leftovers can be stored in the fridge for up to 2 days.
