Ingredients
- 250g ground lamb
- 1 clove garlic, minced
- 1 tbsp fresh mint, finely chopped
- 1 tbsp fresh cilantro, finely chopped
- 1/2 tsp ground ginger
- Sea salt to taste
- 1 large zucchini
- 1 ripe avocado
- 50g cucumber, diced
- 15ml lemon juice
- 15ml extra virgin olive oil
Instructions
- 1.In a medium bowl, combine the ground lamb, minced garlic, chopped mint, chopped cilantro, ground ginger, and a pinch of sea salt. Mix gently with your hands until just combined, being careful not to overwork the meat.
- 2.Form the mixture into 4 small patties, about 2cm thick. Set aside.
- 3.Prepare the salad. Use a spiralizer or vegetable peeler to create noodles from the zucchini. Place them in a large bowl with the diced cucumber.
- 4.In a separate small bowl, mash the avocado with the lemon juice and olive oil until it forms a creamy dressing. Season with another pinch of salt.
- 5.Heat a large skillet over medium-high heat. Cook the lamb patties for 3-4 minutes per side, or until browned and cooked to your liking.
- 6.While the patties cook, pour the avocado dressing over the zucchini mixture and toss gently to coat. Divide the salad and warm patties between two plates and serve immediately.
