Ingredients
- 300g ground lamb
- 2 medium zucchini
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 30g almond flour
- 1 large egg
- 30g fresh mint leaves
- 15g fresh parsley
- 40g walnuts
- 75ml extra virgin olive oil
- 1 lemon, juiced
- 1 tsp ground cumin
- 1/2 tsp ground coriander
- Salt and freshly ground black pepper to taste
Instructions
- 1.In a medium bowl, combine the ground lamb, chopped onion, 2 minced garlic cloves, almond flour, egg, cumin, coriander, salt, and pepper. Mix well with your hands and form into 8-10 small, oblong koftas.
- 2.To make the pesto, add the mint leaves, parsley, walnuts, the remaining 1 clove of garlic, 60ml of olive oil, and the lemon juice to a small food processor or blender. Blend until a coarse paste forms. Season with salt and pepper.
- 3.Use a spiralizer or vegetable peeler to create long noodles from the zucchini. Set aside.
- 4.Heat the remaining 15ml of olive oil in a large skillet or pan over medium-high heat. Carefully place the koftas in the pan and cook for 8-10 minutes, turning occasionally, until browned on all sides and cooked through.
- 5.Remove the koftas from the pan and set aside. Add the zucchini noodles to the same pan and sauté for 1-2 minutes until just tender-crisp. Do not overcook.
- 6.Divide the zucchini noodles between two plates. Top with the lamb koftas and drizzle generously with the walnut-mint pesto before serving.
