Ingredients
- 4 lamb chops (approx. 400g total)
- 1 medium head cauliflower (approx. 500g)
- 30ml olive oil
- 2 cloves garlic, minced
- 5g ground cumin
- 5g ground coriander
- 5g turmeric powder
- 2g smoked paprika
- Salt and black pepper to taste
- Fresh parsley, for garnish
Instructions
- 1.Pat the lamb chops dry. In a small bowl, mix the cumin, coriander, paprika, salt, and pepper. Rub the spice mixture evenly over both sides of the lamb chops.
- 2.Cut the cauliflower into small florets. Steam or boil them for 10-12 minutes until very tender. Drain thoroughly to remove as much water as possible.
- 3.While the cauliflower is cooking, heat 15ml of olive oil in a large skillet over medium-high heat. Add the lamb chops and cook for 3-4 minutes per side for medium-rare, or longer depending on your preference. Remove from the pan and let them rest.
- 4.Transfer the drained cauliflower to a food processor. Add the remaining 15ml olive oil, minced garlic, turmeric powder, and a pinch of salt and pepper. Blend until smooth and creamy.
- 5.Divide the cauliflower-turmeric mash between two plates. Top with two lamb chops each and garnish with fresh parsley before serving.
