Ingredients
- 200g cod fillet, skinless and boneless
- 300g sweet potato (about 1 large)
- 50g fresh spinach
- 1 tablespoon olive oil
- 1 pinch of dried dill (optional)
Instructions
- 1.Peel and chop the sweet potato into small cubes. Steam or boil for 15 minutes until very tender, then drain and mash thoroughly.
- 2.While the potato cooks, gently poach the cod fillet in a shallow pan of water for 5-7 minutes, until it flakes easily with a fork. Drain well and flake the fish, carefully checking for any small bones.
- 3.Finely chop the fresh spinach. You can quickly wilt it by pouring boiling water over it, then squeezing out all excess moisture before chopping.
- 4.Preheat your oven to 180°C. Line a baking sheet with parchment paper.
- 5.In a medium bowl, combine the mashed sweet potato, flaked cod, finely chopped spinach, olive oil, and optional dill. Mix everything together until well combined.
- 6.Using your hands, form the mixture into 10-12 small, bite-sized patties. Place them on the prepared baking sheet.
