Ingredients
- 100g red lentils, rinsed
- 200g carrots, peeled and finely diced
- 50g unsulphured dried apricots, finely chopped
- 1 tablespoon olive oil
- 500ml water or low-sodium vegetable broth
- 1/4 teaspoon ground turmeric
Instructions
- 1.In a medium saucepan, heat the olive oil over medium heat. Add the diced carrots and sauté for 3-4 minutes until they begin to soften.
- 2.Add the rinsed red lentils, chopped apricots, turmeric, and water or broth to the pot.
- 3.Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the lentils and carrots are very soft and have absorbed most of the liquid.
- 4.Remove from the heat and allow to cool slightly. For a smoother texture for younger babies, use an immersion blender to puree the mixture until smooth.
- 5.For older babies and toddlers, you can simply mash the mixture with a fork to leave some texture. Serve warm and store leftovers in the fridge or freezer.
