Ingredients
- 100g red lentils, rinsed
- 200g sweet potato
- 100g carrot
- 100g zucchini
- 15ml olive oil
- 500ml water or low-sodium vegetable broth
- Pinch of dried oregano (optional)
Instructions
- 1.Wash, peel, and finely dice the sweet potato, carrot, and zucchini.
- 2.In a small pot, heat the olive oil over medium heat. Sauté the diced sweet potato and carrot for 3-4 minutes.
- 3.Add the zucchini and cook for another 2 minutes until slightly softened.
- 4.Stir in the rinsed lentils and pour in the water. Bring the mixture to a boil.
- 5.Reduce the heat to a low simmer, cover the pot, and cook for 15-20 minutes until all vegetables and lentils are very soft.
- 6.Remove from heat. For a smooth puree, blend until the desired consistency is reached. For toddlers, mash with a fork to leave some texture.
