Keto Lamb and Halloumi Skillet with Mint-Zucchini

Ingredients
- 300g ground lamb
- 200g halloumi cheese, sliced
- 2 medium zucchini (approx. 400g)
- 1 small red onion, finely chopped
- 2 cloves garlic, minced
- 30ml olive oil
- 15g fresh mint, chopped
- Juice of 1/2 lemon
- 1 tsp dried oregano
- Salt and freshly ground black pepper to taste
Instructions
- 1.Use a vegetable peeler to create long, thin ribbons from the zucchinis. Set aside in a bowl.
- 2.Heat 15ml of olive oil in a large skillet over medium-high heat. Add the sliced halloumi and cook for 2-3 minutes per side, until golden brown and crisp. Remove from the skillet and set aside.
- 3.In the same skillet, add the remaining 15ml of olive oil. Add the chopped red onion and sauté for 3-4 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
- 4.Add the ground lamb to the skillet. Break it up with a spoon and cook for 5-7 minutes, until browned all over. Drain any excess fat if necessary.
- 5.Stir the dried oregano, salt, and pepper into the cooked lamb.
- 6.While the lamb cooks, toss the zucchini ribbons with the fresh mint, lemon juice, and a pinch of salt and pepper.
- 7.To serve, divide the mint-zucchini ribbons between two plates. Top with the seasoned ground lamb and the pan-seared halloumi slices.
