Ingredients
- 500g ground lamb
- 1 large head cauliflower (approx. 600g), chopped
- 2 large sweet potatoes (approx. 500g), peeled and cubed
- 60ml extra virgin olive oil, divided
- 1 large onion, finely chopped
- 2 carrots, finely diced
- 2 celery stalks, finely diced
- 1 small beetroot (approx. 80g), peeled and grated
- 2 cloves garlic, minced
- 250ml bone broth or water
- 1 tsp dried rosemary
- 1 tsp dried thyme
- Sea salt to taste
Instructions
- 1.Preheat your oven to 200°C. Place the cubed sweet potato and chopped cauliflower in a large pot of salted water and bring to a boil. Cook for 15-20 minutes until very tender.
- 2.While the topping cooks, heat 30ml of olive oil in a large skillet or pan over medium heat. Sauté the chopped onion, carrots, and celery for 8-10 minutes until softened.
- 3.Add the minced garlic and cook for another minute until fragrant. Add the ground lamb to the skillet, breaking it up with a spoon. Cook until browned, then drain any excess fat if necessary.
- 4.Stir in the grated beetroot, bone broth, rosemary, and thyme. Season with salt. Bring to a simmer and let it cook for 10 minutes, allowing the flavors to meld and the sauce to thicken slightly.
- 5.Drain the cooked sweet potato and cauliflower well. Return them to the pot and add the remaining 30ml of olive oil and a pinch of salt. Mash with a potato masher or use an immersion blender until smooth and creamy.
- 6.Pour the lamb mixture into a 2-liter baking dish. Spread the sweet potato and cauliflower mash evenly over the top.
- 7.Bake for 20-25 minutes, or until the topping is lightly golden and the filling is bubbling at the edges. Let it rest for 5 minutes before serving.
