Ingredients
- 150g lean ground lamb
- 1 large sweet potato (approx. 300g)
- 1 medium carrot (approx. 80g)
- 50g frozen peas
- 1 tablespoon olive oil
- 1/4 small onion, finely minced
- 1 small garlic clove, crushed
- 100ml water or unsalted stock
Instructions
- 1.Peel the sweet potato and carrot. Chop them into small, even-sized cubes. Steam or boil them for 15-20 minutes until very tender.
- 2.While the vegetables are cooking, heat the olive oil in a small pan over medium heat. Add the minced onion and crushed garlic and sauté for 2-3 minutes until softened and fragrant.
- 3.Add the ground lamb to the pan. Cook, breaking it up with a spoon, until it is browned all over. Drain off any excess fat.
- 4.Pour the water or unsalted stock into the pan with the lamb. Bring to a simmer and cook for 5 minutes to allow the flavors to combine and the meat to become very tender.
- 5.Once the sweet potato and carrot are cooked, drain them and mash with a fork or potato masher until smooth. You can add a splash of the cooking water if needed.
- 6.Stir the frozen peas into the hot lamb mixture; the residual heat will cook them through in a minute or two.
- 7.For serving, you can either stir the lamb mixture into the sweet potato mash for a combined texture, or serve them side-by-side for toddlers to explore separately.
