- 30 ml olive oil
- 1 sprig fresh rosemary
- 15 ml lemon juice
- Salt and freshly ground black pepper to taste
Instructions
- 1.Prepare the vegetables by thinly slicing the fennel, bell pepper, and onion. Mince the garlic cloves. Pat the lamb chops dry with a paper towel and season them generously on both sides with salt and pepper.
- 2.Heat 15 ml of olive oil in a large skillet over medium heat. Add the sliced onion, fennel, and bell pepper. Sauté for 8-10 minutes, stirring occasionally, until the vegetables are tender and lightly caramelized.
- 3.Add the minced garlic and the leaves from the rosemary sprig to the skillet. Cook for one more minute until fragrant. Season the vegetables with salt and pepper, remove them from the skillet, and set aside on a plate.
- 4.Return the same skillet to the stove and increase the heat to medium-high. Add the remaining 15 ml of olive oil. Carefully place the seasoned lamb chops in the hot skillet.
- 5.Sear the lamb chops for 3-5 minutes on each side, depending on their thickness and your desired level of doneness (e.g., 3 minutes for medium-rare).
- 6.Remove the lamb from the skillet and let it rest on a cutting board for 5 minutes. Serve the lamb chops alongside the warm fennel and pepper sauté, drizzling with fresh lemon juice before serving.
