Ingredients
- 100g lean lamb mince
- 50g quinoa, rinsed
- 200g sweet potato, peeled and cubed
- 100g zucchini, chopped
- 1 teaspoon (5ml) olive oil
- 4 fresh mint leaves
- 250ml water or unsalted broth
Instructions
- 1.In a small pot, combine the rinsed quinoa with 100ml of water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until the water is absorbed and the quinoa is fluffy.
- 2.While the quinoa cooks, heat the olive oil in a separate saucepan over medium heat. Add the lamb mince and cook for 3-4 minutes until browned, breaking it up with a spoon.
- 3.Add the cubed sweet potato, chopped zucchini, and the remaining 150ml of water to the saucepan with the lamb. Bring to a simmer, cover, and cook for 10-12 minutes until the vegetables are very tender.
- 4.Drain any excess liquid from the lamb and vegetable mixture. Combine it with the cooked quinoa and fresh mint leaves in a blender or food processor.
- 5.Blend until you reach the desired consistency for your child. Add a tablespoon of warm water, breast milk, or formula if needed to make it smoother for younger babies. Serve warm.
