Ingredients
- 300g ground lamb
- 200g sweet potato, peeled
- 150g zucchini
- 100g carrot
- 1 small onion
- 2 cloves garlic
- 10g fresh ginger
- 1 sprig fresh rosemary
- 30ml extra virgin olive oil
- 15ml lemon juice
- Sea salt to taste
Instructions
- 1.Peel and grate the sweet potato into a bowl. Finely chop the onion, garlic, ginger, and rosemary.
- 2.Add the ground lamb, chopped onion, garlic, ginger, rosemary, and a generous pinch of sea salt to the grated sweet potato. Mix thoroughly with your hands until just combined.
- 3.Form the mixture into 4-6 equal-sized patties. Heat 15ml of olive oil in a large skillet over medium-high heat.
- 4.Carefully place the patties in the hot skillet and cook for 5-7 minutes per side, until golden brown and cooked through. Remove and set aside.
- 5.While the patties cook, prepare the slaw. Use a julienne peeler or grater to shred the zucchini and carrot into a bowl.
- 6.In a small bowl, whisk together the remaining 15ml of olive oil, the lemon juice, and a pinch of salt. Pour the dressing over the slaw and toss to combine.
- 7.Serve the warm lamb patties immediately with the fresh zucchini-carrot slaw on the side.
