Ingredients
- 100g lean lamb mince
- 300g sweet potato, peeled and diced
- 100g frozen peas
- 15ml olive oil
- 1/4 small onion, very finely minced
- 1 tsp fresh mint, finely chopped
- 250ml water or unsalted stock
Instructions
- 1.Heat the olive oil in a small saucepan over medium heat. Add the finely minced onion and cook gently for 2-3 minutes until softened.
- 2.Add the lamb mince to the pan. Cook, breaking it up with a spoon, until it is fully browned.
- 3.Add the diced sweet potato and water/stock. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 10-12 minutes until the sweet potato is very tender.
- 4.Stir in the frozen peas and chopped mint. Cook for another 3-4 minutes until the peas are cooked through and bright green.
- 5.Remove from the heat. For a smooth puree (6+ months), blend until smooth. For a chunkier texture (9+ months), mash with a fork.
- 6.Let it cool to a safe temperature before serving. Store any leftovers in airtight containers in the fridge for up to 2 days or freeze in portions.
