Ingredients
- 400g lean ground lamb
- 1 large zucchini (approx. 300g)
- 2 medium carrots (approx. 200g)
- 1 small red onion, finely chopped
- 2 cloves garlic, minced
- 20g fresh mint, finely chopped
- 20g fresh parsley, finely chopped
- 60ml extra virgin olive oil
- 30ml fresh lemon juice
- 1 teaspoon fresh ginger, grated
- 1/2 teaspoon ground turmeric
- Sea salt to taste
Instructions
- 1.In a medium bowl, combine the ground lamb, chopped red onion, half of the minced garlic, fresh mint, fresh parsley, and a generous pinch of sea salt. Mix well with your hands, but do not overwork the meat. Form the mixture into 4-6 equal-sized patties.
- 2.To make the dressing, whisk together the olive oil, lemon juice, grated ginger, ground turmeric, the remaining minced garlic, and a pinch of salt in a small bowl until well combined.
- 3.Using a spiralizer or a julienne peeler, create 'noodles' from the zucchini and carrots. Place them in a large bowl.
- 4.Drizzle about half of the prepared dressing over the zucchini and carrot noodles and toss gently to coat. Set aside.
- 5.Heat a large skillet over medium-high heat. Add the lamb patties and cook for 4-5 minutes per side, or until browned and cooked through to your desired doneness.
- 6.Serve the warm lamb patties immediately alongside the fresh zucchini and carrot salad. Drizzle the remaining dressing over the patties and salad before serving.
