Ingredients
- 300g lamb, cut into 2-3 cm cubes
- 1 medium zucchini (approx. 200g), chopped
- 1 red bell pepper (approx. 150g), deseeded and chopped
- 1 small red onion (approx. 100g), chopped
- 1 ripe avocado
- 1 clove garlic
- 15g fresh parsley
- 5g fresh mint leaves
- 30ml extra virgin olive oil
- 15ml fresh lemon juice
- 1 tsp cumin powder
- 1 tsp smoked paprika
- 1/2 tsp dried oregano
- Salt and black pepper to taste
- Wooden or metal skewers
Instructions
- 1.In a bowl, toss the lamb cubes with 15ml of olive oil, cumin, paprika, oregano, salt, and pepper until well-coated.
- 2.Thread the seasoned lamb and chopped vegetables (zucchini, bell pepper, onion) onto the skewers, alternating between them.
- 3.To prepare the dip, combine the avocado flesh, garlic, parsley, mint, lemon juice, the remaining 15ml of olive oil, and a pinch of salt in a blender or food processor. Blend until smooth, adding 30-45ml of water if needed to reach a creamy consistency.
- 4.Heat a grill pan or large skillet over medium-high heat. Place the skewers on the pan and cook for 10-12 minutes, turning every few minutes, until the lamb is cooked to your liking and the vegetables are tender-crisp and slightly charred.
- 5.Remove the skewers from the heat and let them rest for a minute. Serve immediately with the fresh avocado-herb dip on the side.
