Ingredients
- 150g cod fillet, skinless and boneless
- 100g red lentils, rinsed
- 200g carrots, peeled and diced
- 1 small onion, finely chopped
- 1 clove garlic, minced
- 1 tbsp olive oil
- 500ml water
- Pinch of dried dill (optional)
Instructions
- 1.Heat the olive oil in a small pot over medium heat. Sauté the finely chopped onion and minced garlic for 2-3 minutes until fragrant and soft.
- 2.Add the diced carrots and cook for another 5 minutes, stirring occasionally.
- 3.Stir in the rinsed red lentils and add 500ml of water. Bring the mixture to a boil, then reduce the heat, cover, and simmer for 15 minutes until the lentils and carrots are very tender.
- 4.Place the cod fillet on top of the simmering lentil mixture. Cover the pot again and let the fish steam for the final 5-7 minutes of cooking, or until it is opaque and flakes easily with a fork.
- 5.Remove the pot from the heat. Flake the cooked cod into the mixture. For a chunkier texture for toddlers, mash everything with a fork. For a smoother puree for babies, transfer to a blender and blend to your desired consistency.
- 6.Allow to cool to a safe temperature before serving. Store leftovers in the fridge for up to 2 days or freeze in portion-sized containers.
