Ingredients
- 100g minced lamb
- 150g sweet potato, peeled and diced
- 100g zucchini, diced
- 50g quinoa, rinsed well
- 300ml water or unsalted broth
- 1 teaspoon olive oil
- Pinch of dried thyme
- Pinch of garlic powder
Instructions
- 1.In a small saucepan, heat the olive oil over medium heat. Add the minced lamb and cook, breaking it up with a spoon, until lightly browned.
- 2.Add the diced sweet potato, zucchini, rinsed quinoa, garlic powder, and thyme to the saucepan.
- 3.Pour in the water, bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the quinoa is cooked and the vegetables are very tender.
- 4.Remove from the heat and let it cool slightly. For younger babies, transfer the mixture to a blender and pulse until smooth. For older toddlers, you can mash it with a fork for a chunkier texture.
- 5.Serve warm. Store any leftovers in an airtight container in the refrigerator for up to 2 days.
