Ingredients
- 500g ground lamb
- 600g sweet potatoes, peeled and diced into 1-2 cm cubes
- 400g zucchini, diced
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 cm fresh ginger, grated
- 150g kale, stems removed and leaves chopped
- 30ml olive oil
- 5g ground turmeric
- Sea salt to taste
- 20g fresh cilantro, chopped, for garnish
Instructions
- 1.Heat the olive oil in a large skillet or pan over medium-high heat. Add the chopped onion and cook for 3-4 minutes until softened.
- 2.Add the minced garlic and grated ginger to the pan, cooking for another minute until fragrant.
- 3.Add the ground lamb to the skillet. Break it up with a spoon and cook until browned, about 5-7 minutes. Drain any excess fat if necessary.
- 4.Stir in the diced sweet potatoes and turmeric. Season with salt. Cover the pan, reduce the heat to medium, and cook for 10-12 minutes, or until the sweet potatoes are tender, stirring occasionally.
- 5.Add the diced zucchini and cook for another 4-5 minutes until it is just tender.
- 6.Stir in the chopped kale and cook for 2-3 minutes until it has wilted down into the hash.
- 7.Remove from heat, taste and adjust seasoning with salt. Serve warm, garnished with fresh cilantro.
