Ingredients
- 100g red lentils, rinsed
- 200g sweet potato, peeled and finely grated
- 70g carrot, peeled and finely grated
- 100g zucchini, finely grated
- 1/4 small onion, very finely chopped
- 1 clove garlic, minced
- 30ml olive oil
- 1 teaspoon dried parsley
- 300ml water
Instructions
- 1.Place the grated zucchini in a clean cloth and squeeze firmly to remove as much excess water as possible. Set aside.
- 2.In a medium saucepan, combine the rinsed lentils, grated sweet potato, carrot, onion, garlic, and 300ml of water.
- 3.Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the lentils are soft and all the water has been absorbed.
- 4.Remove from the heat and allow the mixture to cool for a few minutes. Stir in the squeezed zucchini, parsley, and half of the olive oil.
- 5.Once cool enough to handle, shape the mixture into 12 small, round patties.
- 6.Heat the remaining olive oil in a non-stick frying pan over medium heat. Cook the patties in batches for 3-4 minutes per side, until firm and lightly golden.
- 7.Transfer to a plate lined with a paper towel to cool completely before serving. These can be stored in the refrigerator for up to 3 days or frozen for later.
