Ingredients
- 100g minced lamb
- 150g beetroot, peeled and diced
- 150g sweet potato, peeled and diced
- 50g quinoa, rinsed
- 1 tbsp olive oil
- 20g onion, finely chopped (optional)
- 300ml water
Instructions
- 1.Heat the olive oil in a small saucepan over medium heat. Add the optional chopped onion and cook for 2-3 minutes until softened.
- 2.Add the minced lamb and cook, breaking it up with a spoon, until just browned. Drain any excess fat if necessary.
- 3.Add the diced beetroot, sweet potato, rinsed quinoa, and water to the saucepan. Stir to combine.
- 4.Bring the mixture to a boil, then reduce the heat to low, cover, and simmer gently for 20-25 minutes, or until the vegetables are very tender and the liquid is absorbed.
- 5.Remove from the heat and let it cool slightly. Transfer the mixture to a blender or use an immersion blender.
- 6.Blend to your desired consistency, adding a splash of boiled water if needed to make it smoother for younger babies. Serve warm or store in portions.
