Sunshine Lentil and Root Vegetable Mash

Ingredients
- 100g red lentils, rinsed
- 1 large carrot (approx. 150g), peeled and diced
- 1 parsnip (approx. 150g), peeled and diced
- 1/2 small onion, finely chopped
- 1 tablespoon olive oil
- 500ml water
- 1/4 teaspoon ground turmeric
Instructions
- 1.Heat the olive oil in a medium saucepan over medium heat. Add the finely chopped onion and sauté for 3-4 minutes until softened.
- 2.Add the diced carrot and parsnip, cooking for another 5 minutes, stirring occasionally.
- 3.Stir in the rinsed red lentils and the ground turmeric.
- 4.Pour in the water, bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer gently for 15-20 minutes, or until the vegetables are very tender and the lentils are soft and mushy.
- 5.Remove the saucepan from the heat and allow it to cool for a few minutes.
- 6.Use an immersion blender to puree the mixture directly in the pot until you reach the desired consistency. For younger babies, blend until very smooth. For toddlers, you can leave it slightly chunky.
- 7.Serve warm. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen in individual portions.
