Ingredients
- 150g lean lamb mince
- 250g sweet potato, peeled and cubed
- 100g carrots, finely diced
- 50g frozen peas
- 1/4 small onion, finely chopped
- 1 small garlic clove, minced
- 1 tsp olive oil
- 1 sprig fresh thyme (optional)
- 100ml water or unsalted vegetable stock
Instructions
- 1.Place the sweet potato cubes in a saucepan, cover with water, and boil for 15-20 minutes until very tender. Drain and mash until smooth. Set aside.
- 2.While the potato cooks, heat the olive oil in a small pan over medium heat. Add the finely chopped onion and garlic and sauté for 2-3 minutes until softened.
- 3.Add the lamb mince to the pan, breaking it up with a spoon. Cook for 5-7 minutes until browned all over.
- 4.Stir in the diced carrots, thyme sprig (if using), and water. Bring to a simmer, then reduce the heat, cover, and cook for 10 minutes until the carrots are tender.
- 5.Add the frozen peas and cook for another 2-3 minutes. Remove the thyme sprig.
- 6.To serve, layer the lamb mixture in a small bowl and top with the mashed sweet potato. For younger babies, you can blend the entire mixture to your desired puree consistency.
