Ingredients
- 300g ground lamb
- 500g sweet potatoes, peeled and chopped
- 250g zucchini, grated
- 2 cloves garlic, minced
- 2 cm piece fresh ginger, grated
- 1 tbsp fresh rosemary, finely chopped
- 2 tbsp olive oil
- 1 tsp turmeric powder
- Sea salt to taste
Instructions
- 1.Place the chopped sweet potatoes in a pot, cover with water, and bring to a boil. Cook for 15-20 minutes or until fork-tender. Drain well.
- 2.While the sweet potatoes cook, combine the ground lamb, grated zucchini, minced garlic, and chopped rosemary in a bowl. Season with sea salt and mix well. Form the mixture into 4-6 small patties.
- 3.Heat 1 tbsp of olive oil in a large skillet over medium-high heat. Cook the lamb patties for 4-5 minutes per side, or until cooked through and nicely browned.
- 4.Mash the drained sweet potatoes with the remaining 1 tbsp of olive oil, grated ginger, and turmeric powder. Season with salt to taste and mix until smooth and creamy.
- 5.Serve the herbed lamb patties immediately with the ginger sweet potato mash. Garnish with additional fresh herbs if desired.
