Ingredients
- 250g lean ground lamb
- 500g sweet potatoes
- 40g unsulphured dried apricots, finely chopped
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 sprigs fresh rosemary
- 1 tsp fresh thyme, chopped
- 1 tsp ground ginger
- 1/2 tsp ground turmeric
- 15ml olive oil
- Sea salt to taste
Instructions
- 1.Peel and chop the sweet potatoes into 2-3 cm cubes. Place in a pot with one rosemary sprig, cover with water, and boil for 15-20 minutes until very tender.
- 2.While the potatoes cook, combine the ground lamb, chopped apricots, onion, garlic, thyme, ginger, turmeric, and a pinch of sea salt in a bowl. Mix gently and form into 4 patties.
- 3.Heat a non-stick skillet over medium-high heat. Cook the patties for 4-5 minutes per side, until browned and cooked through. They will cook in their own rendered fat.
- 4.Drain the cooked sweet potatoes, discarding the rosemary sprig. Return them to the pot and add the olive oil, a pinch of sea salt, and the finely chopped leaves from the remaining rosemary sprig. Mash until smooth.
- 5.Divide the rosemary sweet potato mash between two plates and serve the warm lamb patties alongside.
