Ingredients
- 400g ground lamb
- 15g fresh mint, chopped
- 15g fresh parsley, chopped
- 1 small onion, finely grated
- 2 cloves garlic, minced
- 1 large cucumber, thinly sliced
- 150g radishes, thinly sliced
- 1 lemon
- 30ml extra virgin olive oil
- Salt to taste
Instructions
- 1.In a large bowl, combine the ground lamb, chopped mint, parsley, grated onion, minced garlic, and a pinch of salt. Mix gently with your hands until just combined.
- 2.Form the mixture into 4-6 evenly-sized patties, about 2cm thick.
- 3.Heat 15ml of olive oil in a skillet over medium-high heat. Carefully place the patties in the skillet and cook for 3-4 minutes per side, until browned and cooked through.
- 4.While the patties cook, prepare the salad. In a separate bowl, combine the sliced cucumber and radishes.
- 5.Drizzle the salad with the remaining 15ml of olive oil and the juice of half a lemon. Season with salt and toss gently to coat.
- 6.Serve the hot lamb patties immediately with the fresh, zesty salad on the side.
