Ingredients
- 100g lamb mince
- 200g sweet potato, peeled and diced
- 100g frozen peas
- 30g fresh spinach
- 10ml olive oil
- 5g fresh mint leaves, chopped
- 200ml water
- 1/4 clove garlic, minced (optional)
Instructions
- 1.Heat the olive oil in a small saucepan over medium heat. Add the lamb mince and cook until browned, breaking it up with a spoon.
- 2.Add the optional minced garlic and cook for 30 seconds until fragrant.
- 3.Add the diced sweet potato and 200ml of water to the pan. Bring to a boil, then reduce the heat, cover, and simmer for 15 minutes until the sweet potato is very tender.
- 4.Stir in the frozen peas and fresh spinach. Cover the pan and let it cook for another 2-3 minutes until the spinach is wilted and the peas are bright green and cooked through.
- 5.Remove the pan from the heat and stir in the chopped fresh mint.
- 6.Carefully transfer the mixture to a blender. Purée until smooth, adding a little extra boiled water if needed to reach your baby's preferred consistency.
- 7.Allow to cool before serving. Portion into small containers for refrigeration or freezing.
