Ingredients
- 50g red lentils, rinsed
- 150g carrots, peeled and diced
- 30g dried, unsulphured apricots, chopped
- 400ml water or unsalted vegetable stock
- 1 teaspoon olive oil
- 1 pinch of ground cumin (optional)
Instructions
- 1.Heat the olive oil in a small saucepan over medium heat. Add the diced carrots and sauté for 3-4 minutes until they begin to soften.
- 2.Add the rinsed red lentils, chopped apricots, cumin (if using), and water or stock to the saucepan. Stir to combine.
- 3.Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 15-20 minutes until the lentils are soft and the carrots are tender.
- 4.Remove the saucepan from the heat and allow it to cool slightly.
- 5.Carefully transfer the mixture to a blender. Blend until smooth for a baby puree or pulse for a chunkier mash suitable for toddlers. Add a little extra water if needed to reach your desired consistency.
