Ingredients
- 100g red lentils, rinsed
- 200g sweet potato, peeled and diced
- 100g carrot, peeled and diced
- 1 tbsp olive oil
- 1/4 tsp ground turmeric
- 500ml water
- A pinch of black pepper (optional)
Instructions
- 1.In a medium saucepan, heat the olive oil over medium heat. Add the diced sweet potato and carrot and sauté for 3-4 minutes until slightly softened.
- 2.Add the rinsed red lentils, turmeric, and water to the saucepan. Bring to a boil, then reduce the heat to a simmer.
- 3.Cover and cook for 15-20 minutes, or until the lentils and vegetables are very tender and most of the liquid has been absorbed.
- 4.Remove from heat and let it cool slightly. Use an immersion blender or transfer to a regular blender to purée until you reach the desired consistency. Add a splash more water if needed for a smoother texture.
- 5.Serve warm. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze in individual portions.
