Ingredients
- 500g ground lamb
- 1 medium onion, finely grated
- 2 cloves garlic, minced
- 30g fresh parsley, chopped
- 20g fresh mint, chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 large zucchini (approx. 300g)
- 1 lemon, juice and zest
- 30ml extra virgin olive oil
- Salt and freshly ground black pepper to taste
Instructions
- 1.In a large bowl, combine the ground lamb, grated onion, half the minced garlic, chopped parsley, 1 teaspoon of cumin, 1 teaspoon of coriander, salt, and pepper. Mix thoroughly with your hands until just combined, but do not overwork the meat.
- 2.Divide the mixture into 8 equal portions and shape each into a small sausage or oval patty (kofta). You can thread them onto skewers if you have them.
- 3.To make the relish, grate the zucchini and place it in a clean kitchen towel. Squeeze firmly to remove as much excess water as possible. Transfer the dry zucchini to a bowl.
- 4.Add the chopped mint, the remaining minced garlic, lemon juice, and 15ml (1 tablespoon) of olive oil to the zucchini. Season with salt and pepper and mix well. Set aside.
- 5.Heat the remaining 15ml of olive oil in a large non-stick skillet or grill pan over medium-high heat.
- 6.Carefully place the koftas in the hot pan, ensuring not to overcrowd it. Cook for 8-10 minutes, turning every few minutes, until browned on all sides and cooked through.
- 7.Serve the warm lamb koftas immediately with the fresh zucchini-mint relish on the side.
