Ingredients
- 2 lamb cutlets (approx. 240g total)
- 1 medium head cauliflower (approx. 500g)
- 100g fresh spinach
- 2 cloves garlic, minced
- 30ml olive oil
- 5g ground cumin
- 5g ground coriander
- 2.5g turmeric powder
- 15ml lemon juice
- Salt and black pepper to taste
Instructions
- 1.Cut the cauliflower into florets. Steam or boil until very tender, about 10-12 minutes.
- 2.While the cauliflower cooks, heat half the olive oil in a pan over medium heat. Add half the minced garlic and sauté the spinach until just wilted. Season with salt and pepper.
- 3.Drain the cooked cauliflower thoroughly. In a food processor, combine the cauliflower, wilted spinach, the remaining olive oil, and a pinch of salt. Blend until smooth and creamy. Keep warm.
- 4.Pat the lamb cutlets dry. Mix cumin, coriander, turmeric, salt, and pepper in a small bowl and rub the spice mixture all over the lamb.
- 5.Heat a skillet over medium-high heat. Cook the lamb cutlets for 3-4 minutes per side for medium-rare, or to your desired doneness.
- 6.Let the lamb rest for a few minutes. Serve the spiced cutlets on a bed of the cauliflower-spinach mash and drizzle with fresh lemon juice.
