Ingredients
- 1 large aubergine (approx. 400g)
- 250g lamb mince
- 1 red bell pepper, finely chopped
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 30ml olive oil
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp smoked paprika
- Salt and black pepper to taste
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh mint, chopped
- Juice of 1/2 lemon
Instructions
- 1.Preheat your oven to 200°C. Cut the aubergine in half lengthwise. Score the flesh in a diamond pattern, being careful not to pierce the skin. Brush with 15ml of olive oil and season with salt and pepper.
- 2.Place the aubergine halves, cut-side up, on a baking tray and roast for 20-25 minutes, or until the flesh is soft and tender.
- 3.While the aubergine roasts, heat the remaining 15ml of olive oil in a large pan over medium heat. Add the chopped onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
- 4.Add the lamb mince to the pan, breaking it up with a spoon. Cook until browned all over. Drain any excess fat if desired.
- 5.Stir in the chopped red bell pepper, cumin, coriander, and smoked paprika. Cook for 5-7 minutes until the pepper has softened. Season well with salt and pepper.
- 6.Once the aubergine is cooked, gently scoop out most of the soft flesh, leaving a 1cm border. Chop the scooped-out flesh and add it to the lamb mixture in the pan.
- 7.Remove the pan from the heat. Stir in the chopped fresh parsley, mint, and lemon juice.
- 8.Spoon the lamb mixture evenly into the hollowed-out aubergine 'boats'. Return to the oven for a final 5 minutes to heat through before serving.
