Ingredients
- 200g lean minced lamb
- 250g sweet potato (about 1 large)
- 100g frozen peas
- 1 small shallot, finely minced
- 1 clove garlic, minced
- 1 tablespoon olive oil
- 5-6 fresh mint leaves
- Pinch of dried oregano (optional)
- Pinch of black pepper (optional)
Instructions
- 1.Peel and chop the sweet potato into small cubes. Steam or boil for 15-20 minutes until very tender, then drain and set aside.
- 2.While the potato cooks, heat half the olive oil in a small frying pan over medium heat. Sauté the minced shallot and garlic for 2-3 minutes until soft.
- 3.Add the minced lamb to the pan, breaking it up with a spoon. Cook until browned all over. Drain any excess fat.
- 4.In a bowl, thoroughly mash the cooked sweet potato. Add the cooked lamb mixture, oregano, and pepper (if using). Mix until well combined.
- 5.Let the mixture cool slightly, then shape it into 12-15 small, toddler-friendly patties.
- 6.Heat the remaining olive oil in the pan and cook the patties for 3-4 minutes per side, until golden and firm.
- 7.Meanwhile, cook the peas in boiling water for 2 minutes. Drain and transfer to a small bowl with the fresh mint leaves. Mash with a fork to your desired consistency.
- 8.Serve the warm patties alongside the minty pea mash.
