Ingredients
- 100g red lentils, rinsed
- 200g sweet potato, peeled and diced
- 50g fresh spinach, finely chopped
- 30g oat flour (or finely blended oats)
- 1/4 small onion, finely grated
- 1/2 teaspoon dried parsley or oregano
- 2 tablespoons olive oil
Instructions
- 1.Peel and dice the sweet potato. Steam or boil for 15-20 minutes until very tender. Drain and set aside.
- 2.In a small saucepan, combine the rinsed lentils with 300ml of water. Bring to a boil, then reduce heat and simmer for 15-20 minutes until soft and mushy. Drain any excess water.
- 3.In a large bowl, mash the cooked sweet potato. Add the cooked lentils, finely chopped spinach, grated onion, oat flour, and dried herbs.
- 4.Mix everything together until a firm, consistent dough forms. If the mixture is too wet, add a little more oat flour.
- 5.With lightly floured hands, shape the mixture into 10-12 small, flat patties about 4-5 cm in diameter.
- 6.Heat the olive oil in a non-stick frying pan over medium heat. Carefully cook the patties in batches for 4-5 minutes per side, until golden brown and firm to the touch.
- 7.Transfer the cooked patties to a plate lined with a paper towel and let them cool down to a safe temperature before serving to your toddler.
