Ingredients
- 300g lean lamb mince
- 400g sweet potato (about 1 large)
- 200g zucchini (1 medium)
- 150g carrot (1 large)
- 100g fresh spinach
- 1 small onion
- 2 cloves garlic
- 1 cm piece fresh ginger
- 30ml olive oil
- 1 tsp ground turmeric
- 1 sprig fresh rosemary
- 1 tbsp lemon juice
- Sea salt to taste
Instructions
- 1.Peel and dice the sweet potato, zucchini, carrot, and onion into small 1-2 cm cubes. Mince the garlic, grate the ginger, and finely chop the rosemary.
- 2.Heat the olive oil in a large skillet over medium-high heat. Add the onion and cook for 3-4 minutes until softened. Add the garlic, ginger, and rosemary, cooking for one more minute until fragrant.
- 3.Add the diced sweet potato and carrot to the skillet. Cook for 8-10 minutes, stirring occasionally, until they begin to soften and get some color.
- 4.Push the vegetables to one side of the pan. Add the ground lamb to the empty side, break it up with a spoon, and cook for 5-6 minutes until browned.
- 5.Mix the lamb with the vegetables. Stir in the ground turmeric and diced zucchini. Season with sea salt and cook for another 5 minutes until the zucchini is tender-crisp.
- 6.Add the fresh spinach to the pan and stir until it has just wilted. Remove from the heat, squeeze fresh lemon juice over the top, and stir to combine before serving.
