Ingredients
- 300g ground lamb
- 1 large sweet potato (approx. 300g), peeled and diced
- 1 medium courgette (approx. 200g), diced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 cm fresh ginger, grated
- 100g spinach or Swiss chard
- 2 tablespoons olive oil
- 1 teaspoon turmeric powder
- 2 tablespoons fresh mint, chopped
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon lemon juice
- Salt to taste
Instructions
- 1.Heat the olive oil in a large skillet or pan over medium heat. Add the chopped onion and cook for 4-5 minutes until softened and translucent.
- 2.Add the minced garlic and grated ginger to the skillet, cooking for another minute until fragrant.
- 3.Add the ground lamb to the pan. Use a spoon to break it up and cook until browned all over, about 5-7 minutes.
- 4.Stir in the diced sweet potato, courgette, and turmeric powder. Add 60ml of water, bring to a simmer, then cover the pan and reduce the heat. Cook for 10-12 minutes, or until the sweet potato is tender.
- 5.Add the spinach to the skillet and stir continuously until it has fully wilted, which should take about 2-3 minutes.
- 6.Remove the skillet from the heat. Stir in the fresh mint, parsley, lemon juice, and a pinch of salt. Mix well and serve immediately.
