Ingredients
- 300g ground lamb
- 400g sweet potatoes
- 200g kale, tough stems removed and chopped
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp fresh rosemary, finely chopped
- 1 tbsp fresh thyme, finely chopped
- 3 tbsp olive oil, divided
- 60ml water or AIP-compliant bone broth
- Sea salt to taste
Instructions
- 1.Peel and chop the sweet potatoes into 2cm cubes. Place them in a pot, cover with water, bring to a boil, and cook for 15-20 minutes until fork-tender.
- 2.While the potatoes cook, combine the ground lamb, half the minced garlic, all the rosemary, thyme, and a pinch of salt in a bowl. Mix gently and form into 4 patties.
- 3.Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Cook the lamb patties for 4-5 minutes per side until browned and cooked through. Remove from the skillet and set aside.
- 4.Drain the cooked sweet potatoes and return them to the pot. Add 1 tablespoon of olive oil, the water or bone broth, and salt. Mash until smooth and creamy.
- 5.In the same skillet, add the remaining tablespoon of olive oil. Sauté the chopped onion and the remaining garlic over medium heat for 3-4 minutes until softened.
- 6.Add the chopped kale and a splash of water to the skillet. Cover and cook for 5-7 minutes, stirring occasionally, until the kale is wilted and tender. Season with salt.
- 7.Divide the sweet potato mash and sautéed kale between two plates. Serve with two lamb patties each.
