Ingredients
- 500g ground lamb
- 500g sweet potatoes, peeled and diced
- 400g zucchini, diced
- 200g carrots, diced
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 cm fresh ginger, grated
- 1 teaspoon turmeric powder
- 150g fresh spinach
- 3 tablespoons olive oil
- 1 small bunch fresh cilantro, chopped
- 1 lemon, juiced
- Salt to taste
Instructions
- 1.Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chopped onion and cook for 3-4 minutes until softened. Add the ground lamb, breaking it up with a spoon, and cook until browned.
- 2.Stir in the minced garlic, grated ginger, and turmeric powder, cooking for another minute until fragrant. Remove the lamb mixture from the pan and set aside.
- 3.Add the remaining 1 tablespoon of olive oil to the same pan. Add the diced sweet potatoes and carrots, season with salt, and cook for 10-12 minutes, stirring occasionally, until they begin to soften.
- 4.Add the diced zucchini to the pan and cook for another 5-7 minutes until all vegetables are tender-crisp.
- 5.Return the cooked lamb mixture to the pan with the vegetables. Stir everything to combine and heat through.
- 6.Add the fresh spinach on top of the hash. Cover the pan and let it steam for 2-3 minutes until wilted. Remove from heat, stir in the chopped cilantro and lemon juice. Adjust seasoning and serve warm.
