Ingredients
- 300g sea bass fillets (2 fillets)
- 1 medium zucchini (approx. 200g)
- 50g Kalamata olives, pitted and chopped
- 15g capers, rinsed
- 2 cloves garlic, minced
- 45ml extra virgin olive oil
- 2 tablespoons fresh parsley, chopped
- 1/2 lemon, for juice
- Salt and black pepper to taste
Instructions
- 1.Pat the sea bass fillets dry with a paper towel and season both sides generously with salt and black pepper.
- 2.Finely dice the zucchini into small, even cubes.
- 3.Heat 15ml (1 tablespoon) of olive oil in a non-stick skillet over medium-high heat. Place the sea bass skin-side down and sear for 3-4 minutes until the skin is crisp and golden.
- 4.Flip the fillets and cook for another 2-3 minutes until the fish is opaque and cooked through. Remove from the pan and set aside on a plate.
- 5.In the same skillet, add the remaining 30ml (2 tablespoons) of olive oil. Add the minced garlic and cook for 30 seconds until fragrant, being careful not to burn it.
- 6.Add the diced zucchini to the skillet and sauté for 4-5 minutes until it becomes tender but still has a slight bite.
- 7.Stir in the chopped olives, rinsed capers, and fresh parsley. Cook for one more minute to combine the flavors and warm everything through.
- 8.Squeeze in the juice of half a lemon, stir, and season the salsa with a pinch of salt and pepper to your liking.
- 9.To serve, place one seared sea bass fillet on each plate and spoon the warm zucchini-olive salsa generously over the top.
