Ingredients
- 200g lean lamb mince
- 400g sweet potatoes, peeled and chopped
- 100g carrot, finely grated
- 50g frozen peas
- 1/2 small onion, finely chopped
- 1 clove garlic, minced
- 15ml olive oil
- 100ml water
- Pinch of dried rosemary (optional)
Instructions
- 1.Place the chopped sweet potatoes in a saucepan, cover with water, and boil for 15-20 minutes until very tender. Drain and mash until completely smooth, then set aside.
- 2.While the potatoes cook, heat the olive oil in a separate pan over medium heat. Add the finely chopped onion and minced garlic, and sauté for 3-4 minutes until soft and fragrant.
- 3.Add the lean lamb mince to the pan. Cook, breaking it up with a spoon, until browned all over. Carefully drain off any excess fat.
- 4.Stir the grated carrot and optional rosemary into the lamb mixture. Add 100ml of water, bring to a simmer, then reduce the heat, cover, and cook for 10 minutes until the carrot is very soft.
- 5.Add the frozen peas and cook for another 2 minutes. Remove from the heat.
- 6.For a textured meal for toddlers, simply mix the lamb and vegetable mixture with the mashed sweet potato. For a smoother purée for babies, combine everything in a blender and process until it reaches your desired consistency. Cool before serving.
