Ingredients
- 300g lamb leg or loin, cut into 2-3 cm cubes
- 200g halloumi cheese, cut into 2-3 cm cubes
- 1 large zucchini
- 100g cherry tomatoes
- 1 small red onion, cut into chunks
- 45ml olive oil, divided
- 1 lemon, juiced
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 handful fresh mint leaves, chopped
- Salt and freshly ground black pepper to taste
- 4-6 wooden or metal skewers
Instructions
- 1.If using wooden skewers, soak them in water for at least 20 minutes to prevent burning.
- 2.In a bowl, toss the lamb cubes with 15ml of olive oil, minced garlic, oregano, salt, and pepper. Let it marinate for at least 15 minutes.
- 3.Thread the marinated lamb, halloumi cubes, and red onion chunks alternately onto the skewers. Add a cherry tomato to each end.
- 4.Heat a grill pan or outdoor grill over medium-high heat. Grill the skewers for 8-10 minutes, turning occasionally, until the lamb is cooked through and the halloumi is golden brown.
- 5.While the skewers are grilling, create the salad. Use a vegetable peeler to shave the zucchini into long ribbons and place them in a serving bowl.
- 6.In a small jar, combine the remaining 30ml of olive oil, lemon juice, chopped mint, and a pinch of salt and pepper. Shake well to create the dressing.
- 7.Pour the dressing over the zucchini ribbons and toss gently to combine. Serve the hot skewers immediately alongside the fresh zucchini salad.
