Ingredients
- 300g ground lamb
- 300g sweet potato, peeled and diced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 150g fresh spinach
- 30ml extra virgin olive oil
- 1 tablespoon fresh rosemary, chopped
- 1 teaspoon turmeric powder
- 1 tablespoon fresh lemon juice
- Sea salt to taste
Instructions
- 1.Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened.
- 2.Add the minced garlic and diced sweet potato. Cook for 8-10 minutes, stirring occasionally, until the sweet potato starts to soften.
- 3.Add the ground lamb to the skillet. Break it up with a spoon and cook for 5-7 minutes until browned all over.
- 4.Stir the cooked lamb and vegetables together. Season with chopped rosemary, turmeric powder, and sea salt. Mix well.
- 5.Add the fresh spinach in handfuls, stirring until it wilts completely, which should take about 2-3 minutes.
- 6.Remove from heat, stir in the fresh lemon juice, and serve immediately.
