Ingredients
- 300g ground lamb
- 400g sweet potato (about 1 large)
- 150g yellow onion (1 medium)
- 100g kale, stems removed
- 2 cloves garlic, minced
- 30ml extra virgin olive oil
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- 2g sea salt (or to taste)
Instructions
- 1.Peel and dice the sweet potato into 1-2 cm cubes. Finely chop the onion and roughly chop the kale leaves.
- 2.Heat 15ml of olive oil in a large skillet over medium heat. Add the diced sweet potatoes and cook for 10-12 minutes, stirring occasionally, until tender and lightly browned.
- 3.Push the sweet potatoes to one side of the skillet. Add the remaining 15ml of olive oil, followed by the chopped onion. Sauté for 3-4 minutes until softened.
- 4.Add the ground lamb and minced garlic to the onions. Cook for 5-7 minutes, breaking up the meat with a spoon, until it is fully browned.
- 5.Combine the cooked lamb mixture with the sweet potatoes. Stir in the chopped rosemary, thyme, and sea salt.
- 6.Add the chopped kale to the skillet. Cover and cook for 3-4 minutes, allowing the steam to wilt the kale. Stir everything together until well combined and serve warm.
