Herbed Lamb Patties with Cauliflower Mash & Sautéed Kale

Ingredients
- 300g ground lamb
- 1 medium head cauliflower (approx. 500g), cut into florets
- 150g kale, tough stems removed and chopped
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp fresh rosemary, finely chopped
- 1 tsp fresh thyme, leaves picked
- 3 tbsp extra virgin olive oil, divided
- 1 tbsp lemon juice
- Sea salt to taste
Instructions
- 1.Place the cauliflower florets in a pot with a steamer basket over boiling water. Cover and steam for 10-12 minutes, or until very tender. Alternatively, boil the florets until tender and drain well.
- 2.While the cauliflower cooks, combine the ground lamb, half of the chopped onion, rosemary, thyme, and a pinch of sea salt in a bowl. Mix gently and form into 4 equal-sized patties.
- 3.Heat 1 tbsp of olive oil in a large skillet over medium-high heat. Cook the lamb patties for 4-5 minutes per side, or until browned and cooked through. Set aside and keep warm.
- 4.In the same skillet, add another 1 tbsp of olive oil. Sauté the remaining onion and the minced garlic for 1 minute until fragrant. Add the chopped kale and cook for 3-5 minutes, until wilted. Squeeze fresh lemon juice over the kale and season with salt.
- 5.Transfer the steamed cauliflower to a bowl. Add the remaining 1 tbsp of olive oil and a generous pinch of salt. Mash with a fork or potato masher until smooth and creamy.
- 6.To serve, divide the cauliflower mash between two plates. Top with the sautéed kale and place two lamb patties alongside. Serve immediately.
