- 1.In a medium bowl, combine the ground lamb, grated onion, minced garlic, chopped parsley, chopped mint, ground cumin, and ground coriander. Season with salt and pepper. Mix well with your hands until just combined.
- 2.Divide the lamb mixture into 6-8 equal portions and shape them into small, oval koftas.
- 3.In a separate large bowl, prepare the salad by combining the grated carrots, drained chickpeas, lemon juice, and 15ml (1 tablespoon) of the olive oil. Season with a pinch of salt and pepper and toss to combine.
- 4.Heat the remaining 15ml (1 tablespoon) of olive oil in a large non-stick skillet or frying pan over medium-high heat.
- 5.Carefully place the koftas in the hot pan, ensuring not to overcrowd it. Cook for 8-10 minutes, turning occasionally, until browned on all sides and cooked through.
- 6.Serve the warm lamb koftas immediately alongside the fresh carrot and chickpea salad.
