- 100g potato, cut into small 1cm dice
- 60g rice
- 1 clove garlic, minced
- 1/2 small onion, finely chopped
- 1 teaspoon olive oil
- 300ml water or low-sodium vegetable broth
- Salt and black pepper to taste
- 1/2 teaspoon dried parsley or oregano

Instructions
- 1.Heat the olive oil in a small pot or deep skillet over medium-high heat. Add the chopped onion and cook for 3-4 minutes until softened.
- 2.Add the minced meat and garlic to the pot. Cook, breaking the meat apart with a spoon, until it is browned all over. Drain any excess fat if necessary.
- 3.Season the meat with salt and pepper. Stir in the diced potato and the uncooked rice, mixing well to combine with the meat.
- 4.Pour in the water or broth. Bring the mixture to a boil, then immediately reduce the heat to a low simmer.
- 5.Cover the pot and let it cook for 20-25 minutes, or until the potatoes are tender and the rice has absorbed all the liquid.
- 6.Remove from heat and let it stand, covered, for 5 minutes. Fluff with a fork, sprinkle with dried parsley, and serve warm.
